For those of you unfamiliar with the acronym of HELCO: It stands for Hawaii Electric Light Company, which we use for electrical power here on the Big Island. I actually think they try to make us use "HECO," but "HELCO" stuck and everyone just calls it that. Sorry, guys. Anyway, where was I going, with this? Oh, our bill. Our monthly bill came in the mail yesterday, and while there is always some trepidation about opening that sucker, I do look forward to their little newsletter, "Ho'ukui." They have safety tips and RECIPES. Lots of recipes. There is a little history here on their website. This month's recipe sounds delicious -- Spring Minestrone -- and because we are now seeing a lot of spring vegetables in the stores, I think I'll give that a go this week.
