Apologies for the late post! Here it is Sunday evening, already. Where does the weekend go? Well, a fun part of ours went for going to Saturday garage sales, one of our favorite pastimes. We love a good bargain. We seem to either get really lucky or be totally skunked. Yesterday, except for a few rolls of ribbon, was a "skunked" day. One sale was over on Haulaulani Place, in Wainaku, where I hadn't been in years. If you are visiting Hilo, seeing this street is a fun thing to do. There are amazing Craftsman-style homes there (listed on the National Historic Register, in fact) that really made me wonder about life here in Hilo in the 1920s. Here is one that was built by the pioneering Lyman family, now for sale. Donna Duryea of has the listing, if you are home-shopping. Google "Haulaulani Place Images" if you want to see more examples of the beautiful homes.
As promised, I am reporting back on the Zucchini-Mushroom Lasagna of last week. It was great and I will pop in a photo below. I did salt and drain the zucchini, drain the cottage cheese, and sauteed and drained the mushrooms. I made a bechamel sauce and added mozzarella cheese. Yum! Here are this week's plans: Sunday: Found some spearfish at Choice-Mart in Captain Cook, so we'll grill that. Costco had a new Caprese Salad that I hadn't tried before, so picked one of those up, too. Monday: Shrimp and Broccoli Fettucini; Leftover Caprese Salad Tuesday: Lentils with Sausages and Mushrooms; Tossed Salad Wednesday: Ham, Red Cabbage with Apples (I cook in butter and a little brown sugar, and then add balsamic vinegar), and Parsley Noodles Thursday: Fried Chicken, Fresh Corn (thanks again, Choice-Mart), and Mashed Potatoes Friday: Spaghetti Squash with Mushrooms, Olives, Red Sauce and Mozzarella Cheese Saturday: Chili with Tortilla Chips and Guacamole
