As I mentioned in the post below, I am fairly obsessed with Cafe' Pesto's Warm Coconut Tart. it is wonderful. Recently, I wondered if I could duplicate it. The version I found was wonderful -- not a duplicate, but very good. I am terrible at making pie crust, but this recipe called for an unbaked pie shell so I knew we'd get along fine.
Quick and Easy Coconut Pie (adapted from The Grill Out Chill Out Cookbook). 6 T. melted butter, cooled 3 eggs, beaten 2/3 cup sugar 1/2 cup buttermilk 1 cup flaked coconut 1 unbaked 9-inch pie shell Combine butter, eggs, sugar, buttermilk and coconut in bowl; mix well. Pour into pie shell. Bake at 350 degrees for 40 minutes. yiel
