Oh, no, readers. Cruelironing does not surf. I am happy to swim. I do enjoy snorkeling and floating around, bobbing in the waves. That is my speed, and I know my limitations. I like the presence of lifeguards. However, my pal Danny does surf and he also has a very nice new website, haoletravels.com. I checked out his site today, and particularly enjoyed his post about surfing here on the Big Island. He enjoys travel, investing, and real estate. I already subscribed. I have made a lot of meatloaf over the years, for the usual reasons . . . cheap, filling, easy. It makes good leftovers for sandwiches. Did I mention, "cheap"? Frankly, I was never that wild about it until I tried Sam Choy's recipe. Technically, it's his grandmother's recipe. I always make the garlic mashed potatoes (recipe in cookbook) to go alongside. Mr. L. ate it for dinner, and then breakfast, and lunch, today. He likes it THAT MUCH.
While on the Big Island, if you find yourself in Keauhou, Mr. Choy has a wonderful restaurant ("Kai Lanai") overlooking the ocean. Photos can be found, here. Feast your eyes on this Hawaiian version of meatloaf-and-mashed-potatoes! Just some random pretty pictures to share, today.
Lately, I have been obsessed with bolillo bread. It's great for sandwiches. For those of us in Hilo, it can be found at Safeway or Sack N'Save. I haven't checked KTA, yet, but plan to. This morning, I made breakfast sandwiches with the bolillos. I hollowed out the middles, toasted with olive oil, and the filled with scrambled eggs (to which I added cheddar cheese and chives). Delicious!
